LIZARRAN Tapas Restaurant, a new comer to the OC who is bound to be a success. The Spanish based Company currently operates well over 250 locations in Spain, France, Germany, Italy, Canada and Mexico. Lizarran's first US location celebrated its grand opening in downtown Fullerton on August 27th 2008.
The concept of Tapas is an old Spanish tradition that apparently originated during the kingdom of Felipe III, of Spain. The word "tapa" which means "lid" or "cover" in Spanish was used in its gastronomic sense referring to the custom of covering the pitchers of wine with a small portion of bread topped with cheese, ham or other ingredients. - Lizarran.
Tapas are appetizers that generally accompany aperitifs or cocktails. They can also form an entire meal and can range from simple items such as olives, cured meats and cheeses. To more elaborate preparations as croquettes, omelet varieties and miniature sandwiches.
At Lizarran, tapas are referred to as Pintxos. A Pintxo (pronounced "Pincho") is simply a tapa that comes with a toothpick that keeps the baguette bread together with the main ingredients of that particular mini hors d'oeuvre. All cold Pinxo's are fresh and readily available inside a refrigerated display case where guests have the option to pick and choose as they please. What I love about these cold pintxo's at Lizarran is that there is no waiting and the food is at your fingertips to satisfy your instant hunger.
Warm pintxos are served periodically through out the dining room. I was offered several warm pintxos while dining at Lizarran and my favorite treat was a date wrapped in bacon and then fried; it was absolutely creative and delicious.
